Mixed Berries Pie: A Sweet Gesture of Gratitude

Every recipe I share has a piece of my heart, and this mixed berries pie is no exception. Inspired by your thoughtful requests, this pie is my way of saying thank you for embracing my blog and sharing this journey with me.


It’s still incredible to me that a small corner of the internet, filled with my recipes, has brought us together. Whether you’ve liked a post, left a comment, or recreated one of my dishes, your kindness and encouragement mean the world to me.


This pie, with its buttery crust and rich, fruity filling, is a token of my gratitude for all the love you’ve shown. I hope you’ll feel that same love in every bite.


Ingredients

For the Pie Crust:

  • 250g all-purpose flour

  • 125g cold unsalted butter, cubed

  • 50g sugar

  • 1/4 teaspoon salt

  • Ice-cold water, as needed

  • 1 egg (for egg wash)


For the Filling:

  • 300g mixed berries (fresh or frozen; I’m using frozen)

  • 100g sugar (adjust to taste)

  • Zest of 1 lemon

  • Juice of 1 whole lemon

  • 2 tablespoons cornstarch

  • 3 tbsp water


Instructions

  1. Prepare the Pie Crust:

    • In a large mixing bowl, combine the flour, sugar, and salt. Rembering that we spoon the flour into the measuring cup (Apolinario, 2024).

    • Add the cubed, cold butter and mix until the mixture resembles coarse crumbs.

    • Gradually add ice-cold water, mixing until the dough just comes together.

    • Divide the dough into two portions. Take one portion and lightly roll it out, folding it over itself a few times to create layers, then shape it into a disc. Wrap both portions in plastic wrap and refrigerate for 1 hour.


  2. Prepare the Filling:

    • In a saucepan over low heat, combine the mixed berries, sugar, lemon juice and lemon zest. Let the mixture simmer for about 10 minutes, stirring occasionally.

    • In a small bowl, mix the cornstarch with the water until smooth, then add it to the berry mixture. Adding cornstarch to the berry mixture helps thicken the filling, ensuring it achieves the perfect consistency for a luscious, sliceable pie (Chin, 2022).

    • Continue to simmer for an additional 5 minutes, or until the filling thickens into a jam-like consistency. Remove from heat and let cool.


  3. Assemble the Pie:

    • Preheat your oven to 190°C (375°F).

    • Take one portion of dough from the fridge and roll it out on a lightly floured parchment paper. Start from the centre and roll outward, being careful with any cracking at the edges by gently pinching them together.

    • Carefully slide the rolled dough onto a flat pan or pie plate, invert, and gently press the dough into place. Trim the excess dough around the edges and fold or crimp them as desired.

    • Poke the base of the crust with a fork to prevent it from puffing up in the oven.

    • Pour the cooled berry filling into the pie crust.

  4. Top the Pie:

    • Roll out the second portion of dough and create your desired design for the top of the pie. I’ll be opting for the traditional crisscross pattern, but feel free to style it however you like.

    • Once arranged, brush the entire surface with the egg wash and sprinkle a little sugar on top.

  5. Bake:

    • Bake for 40-45 minutes, or until the crust is golden and the filling is bubbly.

    • Allow the pie to cool before serving to let the filling set.


  6. Optional:

    • I served the pie with a scoop of vanilla ice cream on the side for an extra touch of indulgence.
